Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtaining food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
The Bidni, which is also referred to as Bitni, is an olive cultivar from the Mediterranean island of Malta. The fruit is small in size, hearty with a "violet colour", and is renowned for its superior oil which is low in acidity. The latter is generally attributed to the poor quality alkaline soil found on the Maltese Islands. As an indigenous olive cultivar, the Bidni has developed a unique DNA profile, and is believed to be among the most ancient species on the island, triggering local authorities to declare some of these ancient trees as "national monuments", and as having an "Antiquarian Importance", a status which is enjoyed by only a handful of other species. The history of chocolate dates back more than 5,000 years, when the cacao tree was first domesticated in present-day southeast Ecuador. Soon after domestication, the tree was introduced to Mesoamerica, where cacao drinks gained significance as an elite beverage among different cultures including the Maya and the Aztecs. Cacao was extremely important: considered a gift from the gods, it was used as a currency, medicinally and ceremonially. Multiple cacao beverages were consumed, including an alcoholic beverage made by fermenting the pulp around cacao seeds, and it is unclear when a drink that can be strictly understood as chocolate originated. Early evidence of chocolate consumption dates to 600 BC; this product was often associated with the heart and was believed to be psychedelic.
Spanish conquistadors encountered chocolate in 1519 and brought it to Spain as a medicine. From Spain, it gained popularity among the European elite over the following three centuries, was debated for its medicinal and religious merits, and was understood as an aphrodisiac. In the 19th century, technological innovations completely changed chocolate, from a drink for the elite to a solid, milky block increasingly eaten by the public. Australian cuisine is the food and cooking practices of Australia and its inhabitants. Australia has absorbed culinary contributions and adaptations from various cultures around the world, including British, European, Asian and Middle Eastern.
Indigenous Australians have occupied Australia for some 65,000 years, during which they developed a unique hunter-gatherer diet, known as bush tucker, drawn from regional Australian plants and animals. Australia became a collection of British colonies from 1788 to 1900, during which time culinary tastes were strongly influenced by British and Irish migrants, with agricultural products such as beef cattle, sheep and wheat becoming staples in the local diet. The Australian gold rushes introduced more varied immigrants and cuisines, mainly Chinese, whilst post-war immigration programs led to a large-scale diversification of local food, mainly due to the influence of migrants from the Mediterranean, East Asia and South Asia. Saffron (/ˈsæfrən, -rɒn/) is a spice derived from the flower of Crocus sativus, commonly known as the "saffron crocus". The vivid crimson stigma and styles, called threads, are collected and dried for use mainly as a seasoning and colouring agent in food. The saffron crocus was slowly propagated throughout much of Eurasia and was later brought to parts of North Africa, North America, and Oceania.
Saffron's taste and iodoform-like or hay-like fragrance result from the phytochemicals picrocrocin and safranal. It also contains a carotenoid pigment, crocin, which imparts a rich golden-yellow hue to dishes and textiles. Its recorded history is attested in a 7th-century BC Assyrian botanical treatise, and it has been traded and used for thousands of years. As of 2024, Iran produced some 90% of the world total for saffron. At US$5,000 per kg or higher, saffron has long been the world's costliest spice by weight. (Full article...)

Vindaloo evolved from the Portuguese dish carne de vinha d'alhos. As of the 2024 Michelin Guide edition, there are eighteen restaurants in Mexico with a Michelin-star rating. The Michelin Guides have been published by the French tire company Michelin since 1900. They were designed as a guide to tell drivers about eateries they recommended to visit and to subtly sponsor their tires, by encouraging drivers to use their cars more and therefore need to replace the tires as they wore out. Over time, the stars that were given out became more valuable.
The Michelin Guide debuted in Mexico in 2024. Inspectors visited five states—Baja California, Baja California Sur, Nuevo León, Oaxaca, and Quintana Roo—and the capital city, Mexico City. Sixteen restaurants earned one star and two, Pujol and Quintonil, received two. No restaurant earned three stars. Among the awarded restaurants, Michelin included a taco stand, Taquería El Califa de León. Gwendal Poullennec, international director of the Michelin Guides, said it took time to choose which restaurants to visit. Alton Crawford Brown Jr. (born July 30, 1962) is an American television personality, food show presenter, food scientist, author, voice actor, and cinematographer. He is the creator and host of the Food Network television show Good Eats that ran for 16 seasons, host of the miniseries Feasting on Asphalt and Feasting on Waves, and host and main commentator on Iron Chef America and Cutthroat Kitchen. Brown is a best-selling author of several books on food and cooking. A recap series titled Good Eats Reloaded aired on Cooking Channel, and a true sequel series, Good Eats: The Return, ran from 2019 to 2021 on Food Network. (Full article...)
